PiedmontToma Nostrana Cheese

This is a cheese unique to the Piedmont area of Italy. It is a semi-soft, smooth cheese with a good aroma and typical alpine taste. Toma in Piedmontese Occitan language means "little cheese". Referencing the Contadina (peasant!) wife of the pastor who, traditionally, was entrusted with the production of cheese. This is a much more savoury example of an Italian Alp cheese, it’s soft, almost rubbery texture makes for a perfect match with crusty breads.

This is a cheese unique to the Piedmont area of Italy. It is a semi-soft, smooth cheese with a good aroma and typical alpine taste. Toma in Piedmontese Occitan language means "little cheese". Referencing the Contadina (peasant!) wife of the pastor who, traditionally, was entrusted with the production of cheese.

It is a pressed cheese typical cheese of the Piedmont Alps. The appearance of the wrinkled crust is grayish with some patches of reddish or yellow. The paste is soft with pronounced holes. The seasoning is undertaken on fine pine boards to enhance the quality. The taste, gently "musty" recalls the green mountain pastures from which it originates. This cheese has a strong character and works excellent with a good crusty bread.

Drink it with a fine red, or white with good structure to accompany this.
