The rosé “Maria Vittoria and Ottavia” by Fattoria Dianella is a sparkling wine with a definite personality. According to the ancestral method, the second fermentation in bottle occurs naturally and there is no “dégorgement” to maintain the vitality and complexity of the wine. The sediments are the natural consequence of the fermentation in bottle. Rich and elegant it can be paired with fish dishes and crustaceans. Excellent as aperitif and also with medium age cheeses.
Grape variety: 100% Sangiovese.
Manual harvesting and grape selection.
Vineyard: Madonnina, 200 a.s.l, south exposure, spur cordon.
Vinification: soft pressing of the grapes, temperature-controlled fermentation. The second fermentation takes place in the bottle on the yeasts as per the ancestral method. The presence of sediment in the bottle constitutes the typical feature of ancestral method, all the vitality of the wine remains in the bottle which is evolving over time.
Aging: 6 months in stainless steel tanks and subsequently in bottle
Colour: pale pink.
Bouquet: fruity nose and complex aromatic profile with spices and yeasts notes.
Taste: fresh and mineral with a good body and the soft acidity typical of the Sangiovese.
